Naturel Ice Cream

Ingredients:

  • 1 liter of full-fat milk

  • 1 tablespoon of pure salep (check out our product)

  • 1 cup of pine honey (check out our product)

  • 1 teaspoon of lemon peel powder (check out our product)

  • 1 teaspoon of orange peel powder (check out our product)

If you prefer not to use fruit powders, you can also use fresh fruits.


Instructions:

  1. Preparation Stage: First, pour the milk into a saucepan and heat it over medium heat. As the milk warms, add the pure salep. Stir continuously to prevent clumping and ensure that the salep is evenly distributed. Smoothness at this stage is crucial. Once the milk reaches a boiling point, turn off the heat.

  2. Flavoring: At this point, add the lemon peel powder, orange peel powder, and pine honey, and stir again. These natural flavors will add a refreshing citrus taste to your ice cream. We add pine honey after turning off the heat and while the milk cools to preserve its quality and natural properties. The high temperature can increase HMF (Hydroxymethylfurfural) levels in honey, which we avoid by adding it during the cooling phase. Continue stirring to ensure even distribution of the fruit powders and honey. Proceed to the next stage when you achieve a smooth consistency.

  3. Cooling and Resting: Remove the mixture from the heat and let it cool to room temperature. Then, place it in the freezer for 3 hours. Afterward, either stir it with a spatula or blend it to thoroughly mix and prevent crystallization. Return it to the freezer and let it freeze until firm. Once it’s firm, let it soften slightly before giving it a final mix. This process might be a bit labor-intensive, but it’s worth it!

  4. Serving and Storing: At this stage, your ice cream should be ready to enjoy. However, if you want to ensure the best texture, give it one more quick freeze. Transfer it to your serving containers and garnish with lemon peel powder, orange peel powder, or fresh fruits as desired. Enjoy your homemade ice cream! Store any leftovers in an airtight container in the freezer.
